Healthy Holiday Side: Honey Garlic Butter Roasted Carrots
We were searching for a healthy holiday side to add to our next get together and that's when we came across this delicious recipe! The perfect way to sneak in a vegetable in the most delicious way. This honey glaze would also be delicious on sweet potatoes, etc.!

Ingredients
- 2 pounds carrots diagonally cut into about 2 to 3-inch pieces
- 5 tablespoons butter
- 4 garlic cloves minced
- 2 tablespoons honey
- 1/4 teaspoon salt (plus more to season)
- 1/4 teaspoon fresh ground pepper (plus more to season)
- chopped fresh parsley for garnish

Preheat oven to 425 degrees and grease a rimmed baking sheet with cooking spray and set aside.

Cut up the carrots and set aside. I cut mine diagonally and then in half because they were very thick. Set aside in a bowl.

Melt butter over medium-heat in a large nonstick skillet.

Add garlic and cook until lightly browned, stirring very frequently. Make sure you don't burn the garlic!

Remove from heat and stir in the honey until thoroughly combined.

Pour the sauce over the carrots, then add salt and pepper. Mix well.

Transfer carrots to the baking sheet in an even layer. Add more salt and pepper depending on your taste level.

Bake for 22 to 25 minutes, or until carrots are browned and tender.

Remove from oven, sprinkle with seas salt and pepper and transfer to a serving plate.
- Sprinkle with fresh parsley and enjoy!
