Chocolate Beet Muffins


1 1/3 cup flour (oat or spelt)
¼ cup dark cocoa powder
½ tsp baking soda
1 tsp cinnamon
pinch or 2 of allspice
¼ tsp sea salt
2 eggs (room temperature)
2/3 cup coconut oil (melted)
2 TBSP pecan oil
1 tsp vanilla extract
½ cup almond or coconut milk (unsweetened)
¼ cup sweetener (honey or agave)
1 heaping cup of peeled and grated raw red beets
1 small apple peeled and diced tiny
¼ cup unsweetened coconut flakes
¼ cup dark chocolate chips

Heat oven to 350 degrees

Prep Time: 20 minutes

Cook Time: 22-28 minutes

Makes 12 servings

Mix all dry ingredients in a small bowl.

Mix all wet ingredients in a large bowl then add in shredded beets.

Slowly combine dry ingredients into wet ingredients then, stir in all remaining ingredients (apple, coconut flakes and chocolate chips)

Portion out into greased muffin tin or use muffin cups.
