Gluten Free Chocolate Cake with Pecans
Ingredients
1 cup quinoa flour
2/3 cup cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ stick butter, room temperature
½ fat free Greek yogurt
1 cup coconut sugar
2 eggs
1 teaspoon vanilla extract
¾ cup almond or coconut milk
1 cup chopped Guidry’s pecans
- Preheat oven to 350, prepare a round pan
- Mix together flour, cocoa powder, baking soda, baking powder and salt in a small bowl
- In a separate medium sized bowl, beat together butter, yogurt, and sugar then add the eggs, beat until smooth
- Add vanilla
- Add in flour mixture and stir then milk
- Fold in chopped pecans
- Bake for 30-35 minutes, until toothpick comes out clean
