KETO Zucchini Muffin Recipe
Who doesn't want to have the most delicious muffins that are very healthy too? Try these and you won't be disappointed. Using Guidry Organic Pecan Meal!!! These muffins are so moist they are amazing!
1 1/2 Cups Pamela's Pancake and Baking Mix
1/4 cup of brown sugar
1/2 tsp salt
1 TB cinnamon
1/2 cup Guidrys Pecan Meal
1/4 cup coconut oil (melted)
1 large egg
3/4 cup full-fat coconut milk from the can
1 cup of peeled, shredded fresh zucchini
optional: 1/2 cup chopped pecans, walnuts or raisins
Preheat oven to 350 degrees. Oil the muffin tin**
Mix all dry ingredients in one bowl, mix all wet ingredients in another. Combine ingredients then stir in optional add-in if desired. Potion mixture into muffin tin then bake at 350 degrees for 15-20 minutes. Check with toothpick at 12 minutes to judge whether you need to cook for 15 or 20 minutes. Allow to cool before removing from muffin tin.
