Ingredients 

1 ¼ cup pecan meal – Guidry Organic Pecans ground in food processor or blender
3 eggs
2/3 cup + 1 tablespoon flour 
½ cup brown sugar
¼ cup honey + 1 tablespoon 
1 teaspoon vanilla
1 tablespoon amaretto (optional)
2 teaspoons baking powder
1 ½ tablespoon cinnamon 
zest and juice of ½ orange
½ cup buttermilk
½ cup Guidry Organic Pecans, chopped

  1. Preheat oven to 350
  2. In a medium sized bowl, beat eggs for about 2 minutes
  3. Add brown sugar, honey, vanilla, amaretto, orange juice and zest
  4. Mix together flour, pecan meal, baking powder, and cinnamon
  5. Add flour mixture to the wet mixture, stir
  6. Stir in buttermilk
  7. Fold in chopped pecans
  8. Grease muffin tin and fill ¾ full, place a whole pecans on the top in the center of the batter
  9. Bake for 12-15 minutes, slightly before appearing golden brown 
  10. Enjoy!
